Inspired by the famed French goat cheese Morbier – best identified by the thin line of vegetable ash running through its center – Blakesville’s Linedeline is a large format ash-ripened goat cheese that transforms as it ages: When it’s young it’s pleasingly firm, and as it ages a gooey creamline develops under the skin and the paste becomes irresistibly fudgy and fluffy. It has a grassy, citrusy, slightly mushroomy flavor, with a bright tang similar to creme fraiche. Pair with a sweet jam, fresh fruit, a salad, or stir into risotto.
Established in 2020, Blakesville Creamery in Port Washington, Wisconsin, is dedicated to crafting top-quality artisan goat cheeses. As a farmstead creamery, every cheese is handmade on-site using milk from their own goats. Their 10,000-square-foot, state-of-the-art facility ensures each batch is produced with time-honored techniques.
