Lincolnshire Poacher is a remarkable English cheese that marries the savory depth of West Country cheddar with the fruity, nutty elegance of Alpine mountain cheeses like Comté. Aged 18–24 months, it develops a smooth, dense paste with flavors that range from rich, brothy umami to bright, pineapple-like sweetness. This complex flavor evolution makes it both a stunning table cheese and a versatile melter, ideal for everything from fondue to cheese-on-toast or rarebit.
Produced by brothers Simon and Tim Jones in Lincolnshire, England, Poacher is made using raw milk from their herd of 230 Holstein cows. The Jones brothers take a regenerative, land-forward approach to farming, believing that healthy ecosystems foster vibrant microflora, which in turn make better cheese. Their farm is powered entirely by wind and solar energy, water is heated with wood instead of gas, and the cows are fed crops grown on the farm. Field peas and clover replenish nitrogen in the soil, while hedgerows serve as habitats for local birds.
Lincolnshire Poacher is one of the great expressions of modern British cheesemaking: deeply flavorful, classically rooted, and environmentally thoughtful. Its smooth texture and layered flavor make it a favorite for chefs and cheesemongers alike.
