This lightly blued, rare and delicious mixed milk cheese hails from Asturias, Spain where the lush green valleys provide perfect pastures for dairy cattle. La Peral is made from pasteurized cow's milk and aged for sixty days in the natural prehistoric caves that dot the landscape of Asturias. It is smoothly piquant with a strong olive flavor and a pungent aroma. Slightly crumbly, its texture becomes creamier at the finish.
