La Peral is made from pasteurized cow's milk and aged for sixty days in the natural prehistoric caves that dot the landscape of Asturias. It is smoothly piquant with a strong olive flavor and a pungent aroma. Slightly crumbly, its texture becomes creamier at the finish.
