Central Coast Creamery’s Goat Milk Gouda is crafted from 100% whole goat’s milk and goat cream, then aged on pine wood shelves in the creamery’s ripening room for 4 to 6 months. During maturation, the cheese develops a smooth ivory paste and a supple, semi-soft texture with the faintly grainy structure characteristic of aged Gouda. The pine board aging contributes subtle depth while allowing the natural sweetness of the milk to concentrate.
The aroma carries gentle caramel notes, leading into a flavor that is slightly nutty, delicately sweet, and clean on the finish. Its balanced profile makes it ideal for cheese boards, picnic baskets, or melting into warm dishes where a mild goat character is desired.
