Garrotxa is a traditional Spanish goat’s milk cheese from the rugged, forested region of Catalonia. Once nearly extinct, this cheese was revived in the 1980s by a group of young cheesemakers passionate about restoring Catalan culinary traditions. Aged for about 4 to 8 weeks, Garrotxa has a firm yet creamy texture and a distinctive natural gray-blue mold rind that develops in the humid mountain caves where it’s matured.
Garrotxa’s flavor is mild, nutty, and slightly tangy, with clean, milky notes and a subtle earthiness from the rind. Try it with Marcona almonds, quince paste (membrillo), or honey for a classic Spanish pairing, or enjoy it alongside rustic bread and olives. Its mellow flavor also makes it a great addition to salads, charcuterie boards, or melted over vegetables.
