From world-renowned cheesemaker and affineur Rodolphe Le Meunier, Fourme au Moelleux is a stunning blue cheese unlike any other on earth. This cheese begins its life as Fourme D’Ambert, a famous French blue cheese that’s creamy and dense, with a chocolatey, mushroomy yet still mild flavor. But Le Meunier takes this cheese one step further: He washes and injects it with a sweet Vouvray Moelleux dessert wine made from chenin blanc grapes in the Loire Valley, where he’s based, making it softer, creamier, and sweeter.
This step takes an already exceptional cheese and makes it even better, with the wine adding extra sweetness, tang, and complexity. Third-generation cheesemaker Le Meunier has been named both the best cheesemonger in France as well as the best in the entire world, and with one taste you’ll understand why. Pair it with dark chocolate, crumble it on a salad, or serve with honey and fresh fruit.
- Pairings: Dessert wine, juicy red wine, bourbon, wheat beers
