Made from raw cow’s milk that’s handcrafted into 60 pound wheels, the cheese is wrapped in cheesecloth during its 14-month aging process, which allows it to “breathe” while the interior matures.

Fiscalini Farmstead was established in 1914 by John Baptiste Fiscalini, whose father Mateo emigrated from Switzerland to Modesto, California. From its origins as a dairy farm with 10 cows, today it’s a fourth-generation dairy farmstead and cheesemaking facility, where milk from nearly 3,000 cows goes into some of the absolute finest handmade farmstead cheeses in America.
