Pecorino Sardo Maturo DOP by Ferruccio Podda is an aged pecorino made in Sesta, just north of Cagliari in Sardinia. As pecorino ages, the flavors becomes bolder, richer with fruity notes with a distinctive sheepy, tangy finish. Perfect as a table cheese, mature pecorino is also great for grating. Serve with rustic bread, salami, dried fruits, chestnuts, walnuts or with honey, mostarda and even chocolate. Pecorino Sardo D.O.P. Mature Podda goes perfectly with traditional Sardinian wines, full-bodied wines that can accompany the flavor of cheese, like the famous Cannonau di Sardegna Mandrolisai D. O. D. O., and the Carignano del Sulcis Red D. O.
