Made from 100 percent goat’s milk, Central Coast Creamery’s Dream Weaver is truly a dream for goat cheese lovers (and people who think they don’t love goat cheese until they try this). This complex, pure white cheese is washed in white wine and aged for two to three weeks, and the end result is a luscious, toothsome, pudgy, medium-soft paste with a yeasty, floral aroma and notes of sweet cream, salted caramel, fresh vanilla, olive oil, tropical fruits, and a little of that signature goat cheese tang on the palate. Serve it on a cheese board alongside pears, grapes, Marcona almonds, prosciutto, and fig jam.
Nestled in Paso Robles, California—an area with a dairy legacy stretching back more than 150 years—Central Coast Creamery was established in 2012 by Reggie and Kellie Jones. This family-owned creamery is dedicated to producing high-quality cheeses using cow, sheep, and goat milk.
