Comte Fort St. Antoine is a renowned, 12-month-aged cheese from the Jura region of France, made using raw cow's milk. Known for its rich, nutty flavor, this traditional French cheese undergoes careful maturation by legendary affineur Marcel Petit at Fort St. Antoine (a former Franco-Prussian fort built into a hill that has since been converted into Comte-aging caves), where it develops complex notes of toasted almonds, fresh hay, and a subtle hint of fruitiness.
The meticulous aging process enhances the cheese’s smooth texture, creating a firm yet creamy bite with a slight crystalline crunch that melts in your mouth. Its natural, golden rind encases a pale yellow paste. It’s best enjoyed on its own with some crusty bread, roasted nuts, and charcuterie, but it also adds a complex nuttiness to grilled cheese, macaroni and cheese, and fondue.
