Sagittarius from Shooting Star Creamery is a rich, mixed-milk gouda that blends the best of sheep’s and cow’s milk. Aged for a minimum of three months, this golden cheese delivers aromas of butter and berries that leap from the wheel the moment it’s cut. Its flavor unfolds with notes of roasted nuts, olive oil, and fresh herbs, finishing smooth and savory. Firm yet creamy, Sagittarius is a cheese that balances depth with approachability, making it as delightful on a cheeseboard as it is in the kitchen.
Shooting Star Creamery was founded by Avery Jones, daughter of Reggie Jones of Central Coast Creamery, one of California’s most celebrated cheesemakers. Though still a college student, Avery grew up making cheese alongside her father, and her talent shines through in every wheel she produces. Each of her cheeses is named after a star sign, and Sagittarius is a standout—proof that the next generation of American cheesemakers is already making its mark. With a portion of profits donated to veteran-support organizations, this cheese reflects not only skill but also heart.
