Cascadia Creamery uses cow's milk from a fourth-generation dairy that breeds Jersey, Dutch Belted and Friesian cows to make an array of cheeses that are aged in a special aging room built inside a lava tube cave. The natural cave air has an ideal temperature and humidity content for ripening cheese. Sawtooth is a semi-soft washed-rind cheese on the milder side with yeasty, beefy aromas--like French St. Nectaire but better. Named for the nearby Sawtooth Huckleberry Fields on the shoulder of Mt. Adams where Native Americans have picked berries for thousands of years. This semi-soft, raw milk washed rind cheese treats the palate to a fudgy, smooth texture and a complex peaty flavor with notes of freshly pickled walnuts and honeycomb - aged 60 to 75 days.
Like the terroir of a fine wine, it’s all about the soil, the region, and the environment. The Cascadia Creamery cows graze on pastures grown in the rich, volcanic soil of the Cascade Mountains. They drink the mineral-rich glacial waters of snow-capped Mt. Adams. All their varieties provide a rich and unforgettable epicurean experience.
