A beautiful goat cheese produced in the southeast Spanish region of Murcia on the Mediterranean coast, Cana de Cabra is a semi-soft, bloomy-rinded cylinder of cheese that bears a resemblance to French Bucheron. Ages for 21 days, it’s creamy and buttery, with a mild and slightly tangy flavor with notes of mushroom. It’s made from pasture-fed Murcia goats’ milk, which is rich and imbued with the flavors of local grasses and flowers.
Cana de Cabra is rich, creamy, silky, and velvety, with a mellow flavor with a slight lemony tang. Add it to a cheese board with accompaniments including Jamon Serrano, almonds, honey, and figs.
