The name “Butterbloom” perfectly describes this cheese, which is the top-selling cheese of its maker, Briar Rose: It’s super luscious and buttery, and it’s bloomy-rinded. This soft cow’s milk cheese has a thin, delicate white rind similar to brie, and on the inside the texture is smooth and velvety when young but more custardy as it matures. It spreads like buttercream and smells like fresh butter with a hint of sweet tropical fruit, and you’ll find warm buttermilk, mushrooms, creme fraiche, and papaya in the flavor profile. It gets its yellow color from the beta carotene-rich milk, which comes from Guernsey cows, an English breed renowned for its rich milk. Spread it onto a cracker or a smoked turkey sandwich and serve alongside cured meats, apples, grapes, figs, nuts, and honey.
Briar Rose Creamery is a small creamery founded in 2008 by cheesemaker Sarah Marcus in Dundee, Oregon, surrounded by forests and the Willamette Valley’s famed pinot noir vineyards. All of their cheeses are made by hand with locally-sourced dairy, from start to finish, and their milk is sourced from two nearby family-owned dairy farms.
