Beaufort d'Alpage cheese has all the terroir of a fine wine. Hailing from the lush valleys of Southern France, the renowned Alpine cheese is crafted from the raw milk of Tarine or Tarentaise cows. And while Beufort is found all year round, Beufort d’Alpage is made exclusively with summer milk, produced in small quantities by a single cheesemaker, aged for 16-18 months, and available once per year. The coveted cheese has a dense and pliable texture that’s similar to gruyere, with bold flavors ranging from hazelnuts and toasted cream to cooked onions and hay. Treat it like the precious commodity it is, by wrapping it in cheese paper or aluminum foil, and storing in a high-humidity area of your refrigerator; ideally an enclosed spot with limited airflow.
