Bay Blue is Point Reyes’ take on the classic English Stilton cheese but made in California. Crafted from pasteurized cow’s milk from Point Reyes Farmstead’s own herd of happy Holstein cows, this is a friendlier, more approachable version of Stilton, with a lovely mild flavor. Aged for about 90 days, Bay Blue is fudgy and crumbly with lovely flavors of earthy mushrooms, toasted nuts, hints of scrumptious salted caramel. Mild and creamy, you’ll love it with fresh fruit, port, or shaved onto salads. A perfect cheese board blue!
