Alisios is named after the trade winds that blow through the island of Fuerteventura. This mixed milk cheese is made exclusively from milk taken from Canary Island cows (70%) and goats (30%). The whole wheel is covered in sweet pimentón (a form of paprika) from Murcia. The interior of this special cheese is smooth and dense with few eyes. It has toasted notes with a distinct sweetness from the paprika. The goat's milk adds a slight zing to the creamy paste.
Alisios won a Super Gold at the 2016 World Cheese Awards.
