Délice with Papaya — also sold under the names Brillat Savarin with Papaya and Le Délice Papaye — is a French triple cream cow's milk cheese produced in Burgundy and selected for export by Fromi, France's leading specialist in fine cheese.
The base cheese is a soft-ripened, bloomy-rind triple crème in the classic Brillat-Savarin tradition: rich with added cream, cultured slowly, and aged just long enough to develop a delicate white rind. Then comes the twist — a generous crown of candied papaya pieces pressed onto the exterior, turning a classic French cheese into a dessert-worthy centerpiece.
Taste & Texture
Dense, mousse-like, and buttery. A lactic tang is balanced by crème fraîche richness, while the thin bloomy rind is layered with sweet, chewy candied papaya for a clean, sweet-tart finish. Contains 75%+ butterfat in dry matter.
How to Serve
Remove from the fridge 30–45 minutes before serving so the interior softens and the papaya aroma opens up. Beautiful on a cheese board with fresh figs, grapes, and toasted walnuts. A standout dessert cheese with honey and brioche. Pairs with Champagne, Crémant de Bourgogne, Sancerre, Vouvray, or late-harvest Riesling.
