It all began following WWI when Leo Kutter emigrated from Germany to Cowlesville, NY. In the early sixties, the Kutter's began a long business relationship with the Yancey family, owners of the Original Heluva Good Cheese Company. In 1998 Richard and Tony Kutter decided to retire. John Yancey and his long-time business associate, Mike Wimble, bought Kutter's Cheese business and factory and Yancey's Fancy® was created. Fusing over 70 years of experience, they have launched many new and exciting varieties of cheeses. They have reintroduced the flavor that made New York famous for handcrafted cheddar so many years ago.
The Finger Lakes region in central New York State is made up of a group of eleven long, narrow lakes. This area is the perfect and rare mix of good geology and geography. After the receding glaciers carved the immense troughs that are now their gorgeous lakes, they left long, sloping hillsides above the waterlines increasing "air drainage," providing optimum grape-cultivating conditions. Combine that with latitude, maturity of the vineyards (many generations old), and the expertise of some of the world's best wine-makers, and you have magnificent wines.
Yancey's Fancy Aged Cheddar with Finger Lakes Champagne is a fusion of great New York State products. Rich, local milk is used to create their classic aged cheddar, combined with Finger Lakes Champagne, you get a wonderfully moist, dense cheddar with a hint of champagne in both flavor and scent. An unusual combination that tastes great!
