Zamorano is a firm Spanish sheep’s milk cheese produced in the province of Zamora in Castilla y León. Made from the milk of Churra and Castellana sheep, it is aged for several months to develop its dense texture and distinctive patterned rind. The traditional basket-weave imprint on the exterior reflects its heritage and careful maturation.
The paste is ivory to pale yellow, firm and compact with a smooth, slightly crystalline texture as it ages. Flavor is rich and nutty with notes of toasted almond and caramel, balanced by a gentle tang and lingering savory depth. Its structure makes it ideal for slicing onto cheese boards, shaving over salads, or enjoying simply with bread to highlight its sheep’s milk character.
