Yugeta Shoyu was founded in 1923 in Tawame, Saitama Prefecture, just outside Tokyo. Now led by fourth-generation shoyu maker Yohichi Yugeta, the company remains dedicated to preserving the craftsmanship of traditional soy sauce brewing. By using only Japanese-grown soybeans and wheat and fermenting slowly in cedar barrels, Yugeta produces a shoyu that reflects its terroir and history.
