Bernina’s beef bresaola is crafted in the tradition of Valtellina, the alpine region of northern Italy where this delicately cured specialty was first developed centuries ago. Made from carefully selected lean beef cuts, it is seasoned with salt and aromatic spices, then air-cured to achieve its signature deep red color and supple texture. The whole 2.5 lb format allows for custom slicing, ideal for foodservice or refined home presentation.
Aged for up to three months, the bresaola develops a tender, flexible consistency and a soft, clean flavor with subtle alpine spice notes. Exceptionally lean and high in protein, it offers a delicate aroma and melts smoothly on the palate. Slice it paper-thin and serve with arugula, shaved Parmigiano Reggiano, olive oil, and lemon, or incorporate into composed salads and antipasto platters.
