Founded in 1938, Nitto Jozo is now helmed by third-generation president Yoichi Ninagawa, who produces white tamari in small batches with locally sourced Japanese ingredients and pure mountain spring water.
This white tamari is a beautifully delicate seasoning brewed from just wheat, salt, water, and koji—no soybeans. Because traditional soy sauce darkens with soy content, Ninagawa-san’s 100% wheat formula results in a pale, clear, and flavor-rich liquid that the Japanese government doesn’t officially recognize as soy sauce—hence the playful name "white tamari."
This unique brew offers a balanced combination of salt, sweetness, and umami that enhances rather than overpowers. It’s ideal for vinaigrettes, finishing sauces, or gently seasoning dishes where you want the ingredients to shine. Refrigerate after opening to preserve its subtle complexity.
