White peppercorns are ripe peppercorns (the same as black), but processed in a different way. The outer skin is soaked in water to remove the skin, and then the fruit is dried. Because of this process, the flavor of white pepper is different from black.
Widely used in Asian dishes to add a subtle heat, it is also used in European cookery - especially in dishes where black pepper would detract from the dishes' appearance. Commonly used in cream sauces, soups and whipped potatoes.
Use to finish dishes as it can have a bitter flavor if cooked.
