White Anchovies, marinated in vinegar and salt then packed in oil, are one of the most prized delicacies of the Mediterranean. These anchovies, also known as Boquerones, are known for their delicate, silky texture and mildly salty taste. Like all natural anchovies, they can complement any dish, are great as appetizers, salad garnishes and sandwich fillers or simply can be enjoyed alone. The marinade can be used in salads and as a gourmet drizzle as well.
This fish, scientifically known as Engraulis Encrasicolus, is found only in the Mediterranean Sea. It is famed for its delicate (i.e. not fishy) taste and soft texture. Only the best white anchovies are selected, then prepared by hand, one little fish at a time. It is this laborious process that makes them a relatively expensive luxury item.
Harvested by independent fishing boats throughout the Mediterranean, processed by hand in Turkey. Drained weight 24.7 oz.
