For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.

Broadleaf’s Venison fore shanks, cut into 2-inch, 7-ounce pieces, bring a refined take to the Italian classic dish osso bucco. Taken from the front legs of free-range New Zealand red deer, these cuts are smaller and leaner than their hind shank counterparts, with slightly less marrow but a subtler, more delicate texture. The fore shank’s finer muscle structure makes it especially well-suited to slow braises, producing tender, flavorful meat that melds beautifully with rich broths and aromatic vegetables.

While hind shank osso bucco offers larger portions with more robust flavor, fore shank cuts are prized for their finesse and balance, making them perfect for lighter presentations without sacrificing depth. Braise gently with wine, stock, and herbs for the classic Milanese-style osso bucco, or slow-cook in rustic stews to showcase the venison’s natural richness. The smaller size also makes fore shank pieces ideal for individual plating.
