Quesería La Antigua’s Vellón de Fuentesaúco Zamorano DOP is a benchmark example of Spain’s great sheep’s milk cheeses—crafted entirely by hand using raw milk from Churra and Castellana sheep, two ancient native breeds known for producing exceptionally rich, flavorful milk. These sheep graze on the natural pastures of Zamora, giving the milk—and therefore the cheese—a distinct terroir marked by deep, nutty, pastoral notes. Certified under the Protected Designation of Origin (D.O.P. Queso Zamorano), this cheese adheres to strict standards that protect its heritage, production methods, and regional authenticity.
During its 4–6 month maturation, the wheels are bathed in extra virgin olive oil, which contributes to their beautifully formed natural rind and subtly enriches the paste. Inside, the cheese is firm, compact, and ivory-yellow, with small, evenly distributed eyes. The flavor is full and persistent: buttery, nutty, and slightly sweet, with aromas reminiscent of raw sheep’s milk, cooked butter, and toasted nuts. A long finish reflects both the quality of the milk and its extended cellar aging.
