How We Ship

FreshWave Packaging

Our products are always shipped so they will arrive at your door in optimal condition! We’ve carefully selected packaging options that have minimal impact on the environment without compromising on food safety or quality.

For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.

Quesería La Antigua’s Vellón de Fuentesaúco Zamorano DOP is a benchmark example of Spain’s great sheep’s milk cheeses—crafted entirely by hand using raw milk from Churra and Castellana sheep, two ancient native breeds known for producing exceptionally rich, flavorful milk. These sheep graze on the natural pastures of Zamora, giving the milk—and therefore the cheese—a distinct terroir marked by deep, nutty, pastoral notes. Certified under the Protected Designation of Origin (D.O.P. Queso Zamorano), this cheese adheres to strict standards that protect its heritage, production methods, and regional authenticity.

During its 4–6 month maturation, the wheels are bathed in extra virgin olive oil, which contributes to their beautifully formed natural rind and subtly enriches the paste. Inside, the cheese is firm, compact, and ivory-yellow, with small, evenly distributed eyes. The flavor is full and persistent: buttery, nutty, and slightly sweet, with aromas reminiscent of raw sheep’s milk, cooked butter, and toasted nuts. A long finish reflects both the quality of the milk and its extended cellar aging.

This is an extraordinary cheese for a tasting board—slice it thin and serve with quince paste, Marcona almonds, or crusty bread. Its robust flavor also holds up beautifully alongside Spanish charcuterie, honey, or ripe pears. Whether enjoyed on its own or paired thoughtfully, it offers a truly gourmet experience and an introduction to one of Spain’s most exceptional traditional cheeses.

  • Pairings: Tempranillo, aged Rioja, or dry sherry; quince paste, figs, or serrano ham.
Ingredients: Raw sheep milk, E-252, lysozyme (egg derived), cultures, rennet and salt. Rind soaked with olive oil.
