This is a premium cut prized for its rich flavor and classic role in Italian cuisine. Cut into thick 2.5-inch cross sections, each piece includes the bone with its prized marrow center, which melts during cooking to create deep, savory richness and a luxurious texture. The hind shank is slightly meatier and more robust than the front, offering a fuller, more substantial portion.

The meat is tender with a fine grain that becomes exceptionally succulent when slowly braised. As it cooks, the marrow enriches the sauce, adding depth and body that define traditional osso buco. This cut is best prepared with slow, moist cooking methods such as braising with wine, stock, tomatoes, and aromatics until the meat is fork-tender and infused with flavor.
