This speck is produced by Recla, which has been crafting the finest cured Italian meats for three generations, using recipes that haven’t changed in decades. It starts with the highest-quality Italian pork legs, which is carefully trimmed, spiced, cold-smoked over beechwood, and dry-cured in the fresh, dry air of the Vinschgau Valley in South Tyrol for 22 weeks.
The end result has a similar look and texture to prosciutto, but the flavor is completely different. Its delicate smokiness is pronounced, and additional seasonings like juniper berries and bay leaves also contribute to the depth of flavor.
