During production, fine strands of authentic La Mancha saffron—Spain’s most celebrated spice—are infused directly into the milk, lending the finished cheese its warm golden hue and distinctive floral, slightly earthy aroma. As it matures in the cellar for 4 to 6 months, the cheese develops a firm, manchego-like texture and a perfectly balanced flavor: nutty, gently tangy, and lifted by the delicate sweetness of real saffron.
