This whole boneless Serrano Ham is a traditionally dry-cured Spanish ham crafted with nearly a century of expertise. Produced by the Redondo family since 1920, this serrano reflects a meticulous, time-honored process that emphasizes careful selection, precise salting, and slow curing to achieve a balanced, expressive final product. Boneless and weighing approximately 12 pounds, it is well suited for foodservice use or custom slicing.

This serrano ham is cured in Utiel, Spain, at around 900 meters above sea level, where a Mediterranean climate with continental influences creates ideal conditions for developing aroma, texture, and flavor. The result is a ham with a firm yet supple texture, gentle saltiness, and clean, savory notes that unfold gradually on the palate. Subtle sweetness and a lingering finish reflect both the quality of the pork and the patience of the curing process.

Redondo Iglesias controls every step of production, from sourcing and salting to drying and aging, guided by the knowledge of four generations of maestros jamoneros. While remaining deeply loyal to traditional methods, the family integrates modern quality controls to ensure consistency and excellence, producing serrano hams recognized internationally for their character, balance, and reliability.
