Made in the same tradition as its classic Italian counterpart, Smoking Goose’s Genoa Salame is made with pork and seasoned with garlic, white pepper, and black pepper. Peel away the casing, slice, and serve in sandwiches, on focaccia, or alongside fresh sheep and goat cheeses and minerally white wines.
Smoking Goose opened in 2011 in Indianapolis, founded by chef Chris Eley to celebrate old-world charcuterie made the right way. All meats come from trusted small farms and are free of hormones, antibiotics, and confinement practices. Using slow, traditional methods, they craft salumi, sausages, and more with real, authentic flavor.
Ingredients: Pork, pork fat, sea salt, dextrose, celery powder, garlic, spices (white peppercorns, black peppercorns), lactic acid starter culture.
