Lowry Provisions may be best known for its salami, but its Royal Ham just might be the best you’ll ever try. Since its founding by Eric Sather in 2023, it’s established a reputation as one of the Midwest’s top purveyors of pork products, sourcing only hormone-free, antibiotic-free heritage pork from regional farms.
This French-style ham was passed down to Eric from Mike Philips at Red Table Meats, which closed in 2024 after eight years in Northeast Minneapolis’ famed Food Building. Lowry Hill moved into Red Table’s old space, and they call this “the baton passed down from Red Table”: It’s delicately seasoned, cured, and cooked with mild smoke. It’s buttery and porky, with a generous fat cap, and is unlike any other ham you’ll ever try. Enjoy it on a sandwich, alongside a wedge of good cheddar, or sliced thinly on its own.
