Established in 1893, Iio Jizo has become synonymous with premium rice vinegar in Japan. Fifth-generation owner Akihiro Iio continues the tradition of using exclusively 100% new-harvest pesticide-free rice. Each bottle takes more than a year to complete, starting with sake brewed on-site following techniques refined over centuries. This painstaking process also underlies their distinctive purple sweet potato vinegars.
