Provolone Piccante is a firm, cow’s milk cheese aged for 10 months to develop its signature sharpness and depth. Made in the traditional pasta filata style, the curd is stretched and shaped before being aged to concentrate flavor and refine texture. Over time, the cheese becomes dense and smooth, with a natural rind and a pale ivory interior.
The extended aging gives Provolone Piccante a pronounced, savory bite balanced by nutty, slightly tangy notes and a long, clean finish. Its texture is sliceable yet firm enough for grating, making it versatile for cheese boards, antipasti, sandwiches, and melting applications. Shaved thin, it delivers bold flavor; grated, it adds sharp complexity to baked dishes and sauces.
