The Frescatrano is similar to the Castelvetrano but is a Halkidiki varietal olive from Greece that is unpasteurized and unfermented. Divina also foregoes the fermentation stage of curing, like Castelvetrano olives, so that the fruit is able to retain its natural sweetness and vibrant color. Arguably the most difficult curing style to master, the Greek Frescatrano is uniquely special and offers a universally pleasing and mild flavor profile. Bright, sweet, fruity, buttery, fresh and crisp - these olives are perfect with just about everything. The perfect counterpart to cocktails, cheese plates and charcuterie. Wonderful in grain salads, pasta dishes, atop crostini or tossed with fresh greens. Always perfect with Feta, Brie, Goat, Ricotta and Fresh Mozzarella.
