The pigs’ acorn-rich diet during the Montanera season develops delicate intramuscular marbling, resulting in a cut that is leaner than jamón but equally complex in flavor and elegance.
Each loin is seasoned with paprika and a proprietary blend of spices that subtly enhances the natural sweetness and depth of the meat without overpowering it. It’s then carefully cured in the village of Jabugo, where Cinco Jotas’ master artisans monitor every stage of the process to ensure impeccable flavor, texture, and aroma.
