Made from the front leg of serrano pork, paleta has a slightly more pronounced aroma and deeper savory character than jamón, with a beautiful balance of lean meat and silky fat. After being salted and rested, each shoulder undergoes a long, slow cure in the mountain village of La Alberca, Salamanca, where cool, dry air naturally concentrates its flavor.
The result is a rosy, aromatic paleta with a delicate chew and notes of warm spice, cured sweetness, and gentle salinity. Bringing the slices to room temperature allows the fat to soften, releasing its full aroma and giving each bite a supple, melt-in-the-mouth feel.
These thin slices are ideal for tapas, crusty bread with tomato, charcuterie boards, or pairing with olives and sharp cheeses. Paleta serrano is also excellent draped over roasted vegetables, folded into omelets, or added to salads for a touch of savory depth.
