Olive Scourtins are named for the Provençal word that refers to a natural fiber filter that separates the oil from pressed olives. Lark was so taken with this discovery (and the olives) that they created their own version of Scourtins. Made in the traditional French provencal-style, they’re a savory and buttery shortbread packed with cured black olives and dusted with sea salt. Dip in olive oil at your own risk!
