Murcia al vino is a Spanish goat cheese from the Murcia region, known for its distinctive wine-soaked rind and balanced, approachable flavor. Made from pasteurized goat’s milk, the cheese is bathed in red wine during aging, giving the exterior its deep purple hue while subtly influencing the paste within. The texture is smooth and semi-firm, with a mild tang and gentle acidity that’s rounded out by a faint fruity note from the wine.
