Fermin Morcilla Ibérica Blood Sausage is an authentic Spanish delicacy from the province of Salamanca, made according to one of Spain’s oldest culinary traditions. Crafted from premium free-range Ibérico pork, this all-natural black sausage blends rich pork fat with fresh pumpkin, onions, smoked paprika, and oregano to create a deeply flavorful and aromatic sausage that’s rich, smoky, and mildly spiced. The addition of pumpkin and onion adds moisture and balance, making this version of morcilla both unique and refined.

What is Morcilla? Morcilla is a traditional Spanish blood sausage, a staple of Iberian cuisine made by combining pork blood with seasonings and fillers such as onions, rice, or pumpkin. The result is a deeply savory sausage that’s both hearty and aromatic, with a distinct earthy sweetness from its natural ingredients. In Spain, morcilla is often enjoyed grilled or fried until crisp, paired with fresh bread, or served alongside fried eggs, chorizo, or beans for a rustic, satisfying meal.

Fermin is a family-owned producer based in La Alberca, Salamanca, where Iberico pigs roam freely in the UNESCO-protected Sierra de Francia. Since 1956, the company has upheld artisanal methods passed down through generations—curing, aging, and crafting Iberico products with care and respect for nature. Fermin was the first Iberico producer authorized to export to the United States, bringing Spain’s legendary charcuterie traditions to tables around the world.
