For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Isigny’s 18-month aged mimolette is an intense and character-driven expression of this historic Normandy cheese. Made from exceptionally rich milk sourced exclusively from the coastal pastures of Isigny-sur-Mer—famed for their mineral-dense grasses and mild oceanic climate—this cheese reflects the same dairy excellence that helped this earn “Best Cheese in the World” at the 2023 Lyon International Fair. After production, each wheel enters Isigny’s centuries-rooted aging process, where master cheesemakers turn, brush, and tap the cheese with a boxwood mallet to monitor structure and development.

At 18 months, mimolette transforms dramatically: the paste becomes firm and brittle, with a striking deep orange color from natural annatto. Its flavor is bold and concentrated—nutty, caramelized, savory, and slightly salty—showing the full complexity that long-aged mimolette is known for. The rind takes on a rugged, cratered appearance shaped naturally by controlled cellar flora and cheese mites, a traditional hallmark of high-quality aged mimolette.

Use it grated over pastas, risottos, vegetables, and soups; shaved onto salads and charcuterie boards; or broken into crunchy, crystalline chunks for snacking. Its intensity makes it a standout on cheese boards and a powerful finishing cheese in both home and professional kitchens. Available from an 8-ounce portion to two full 6.2-pound wheels, it offers exceptional versatility regardless of scale.
