This is a bold, fully matured expression of Menorca’s iconic cow’s milk cheese, protected by Denominación de Origen status. Produced using traditional methods on the island, this Reserva version reflects extended aging that deepens both texture and flavor while highlighting the influence of the island’s coastal terroir.
After 12 months, the cheese becomes firm and more compact, often with a slightly crumbly texture and occasional crystalline crunch. The flavor is robust and savory, with pronounced notes of toasted nuts, caramel, and butter, complemented by a sharper tang and a subtle salinity that comes from the Mediterranean environment. Compared to younger Mahón, the Reserva is more intense, complex, and lingering on the palate.
