Bacon Italiano Maestri is made from from select fresh cuts of pork belly. This is essentially pancetta in flat bacon form. The process involves salting and adding an in-house blend of spices, the result is a tasty cured meat with delicate smoky notes. When cooked, there is minimal shrinkage because there is no added water. The salting removes moisture from the meat as well. It can also be enjoyed raw because it is cured.
Maestri imports their meat specialties directly from their regions of origin to the United States, and then slice them freshly and with care in their state-of–the-art facility.
