COVAP Lomo Puro de Bellota is a premium dry-cured pork loin made from 100% purebred Ibérico pigs raised free-range in the Valle de los Pedroches, one of the largest holm oak forests in the world. COVAP—Spain’s largest farmers cooperative—has been raising Ibérico pigs since 1959, with four generations dedicated to preserving and perfecting this extraordinary culinary tradition. The pigs feast on up to 20 pounds of sweet acorns daily, which infuse the meat with its delicate, nutty flavor and exceptional marbling.
This pork loin comes from the same Ibérico pigs used for the renowned jamón ibérico de bellota. Cured simply with sea salt and air-dried to perfection, it boasts a buttery texture, complex aroma, and naturally sweet, rich flavor. The sweetness of the local Encina acorns creates a more balanced and nuanced profile compared to other Ibérico products, making this lomo an elegant centerpiece for any charcuterie board.
