Sabarot cultivates their AOC Green Lentils in Haute-Loire, Auvergne, France. The Le Puy Green Lentil is a special variant, rediscovered in the 1990s by the famous chiefs Régis Marcon, Paul Bocuse, Bernard Loiseau and Michel Roth. According to the rules governing its AOC, they can only be grown in the microclimate of the volcanic lands of Velay. Referred to as the "caviar of the poor", French Green Lentils are an excellent side dish, simply cooked in water. Boil these lentils over low heat in three times their volume of water for about 20 minutes.
