These premium anchovies are sourced from the cold, pristine waters of the Cantabrian Sea, where they’re caught at the height of the season for peak flavor and texture. Each fish is hand-selected, salt-cured for months in wooden barrels, and slowly matured to achieve a delicate balance of richness, umami, and sea-salt savoriness. Once perfectly cured, the anchovies are hand-packed in smooth extra virgin olive oil, giving them a velvety mouthfeel and refined finish that distinguishes them from ordinary tinned fish.
