Orcas Island’s beloved Italian Plums (Prune Alley, in the middle of town, used to be a country lane through an orchard of Italian prune trees) shine in this well-rounded preserve-accented with garden grown anise hyssop. Deep purple, rich, with just a hint of licorice. Try it lathered on toast, dolloped on dessert, or straight from the spoon. Perfect with Delice de Bourgogne or any triple crème. Or use layered into a jam tart with pate brise base and crumble topping.
Spoon preserves, more like a traditional jam, are soft with lots of great texture. Super fruit forward, these are made using classic French techniques, including a long soak to draw out the most from the fruit's juices. They are equally at home on toast, dessert, cheese, or straight from the spoon (the way preserves were originally enjoyed - unadorned - all eyes on the fruit in the middle of a snowy winter).
