Fat Toad Farm in Vermont is known for crafting the best goat's milk 'cajeta' caramel. Similar to dulce de leche, the recipe for cajeta has its roots in Mexico. Fat Toad Farm took their unique and super velvety goat's milk caramel and infused it with Irish Whiskey. Made with a few simple additions of pure cane sugar, heavy cream and sea salt, this caramel sauce has serious depth and flavor. The subtle tang of goat's milk on the finish is the perfect balance of tang and sweetness, making this sauce perfect for cheese, ice cream and a variety of pastry applications.
Fat Toad Farm is a small, family owned and operated goat dairy run by husband and wife team Judith Irving and Steve Reid and their daughters Calley Hastings and Hannah Reid. The family has spent several years building a high quality French Alpine and Saanen goat herd. In the Spring of 2007, they took a major leap and became a certified goat dairy producing fresh goat cheese and goat’s milk caramel (cajeta). Their 55 milking does (female goats) are rotationally grazed during the pasture months on thirty acres of neighboring green pastures, they are also fed high quality grain and hay to supplement their diet.
