Produced from raw cow’s milk sourced from herds grazing on lush Alpine meadows, Appenzeller owes much of its character to its signature aging process. Each wheel is aged for a minimum of 90 days and regularly washed with a secret herbal brine made from wine, cider, and a proprietary blend of herbs, blossoms, and spices. This careful ritual infuses the rind with flavor, creating layers of depth that reveal notes of ginger, black tea, clover, and alpine herbs.
